Firecracker Grilled Alaskan Salmon

INGREDIENTS:
4 (4 to 6 oz each) Alaskan Salmon fillets
¼ cup peanut oil
2 tbl soy sauce
2 tbl balsamic vinegar
2 tbl green onions, chopped
1 ½ tsp brown sugar
1 clove garlic, minced
1 tbl ginger, grated
7/2 tsp red chili flakes
1 tsp sesame oil
1/8 tsp salt (optional)

STEPS:
Place Salmon fillets in a glass dish. Whisk together remaining ingredients and pour over salmon. Cover with plastic wrap and marinate in refrigerator 4 to 6 hours. Remove salmon from marinade and place on a well oiled grill 5 inches from coals. Grill for 8 to 10 minutes per inch of thickness, measured at the thickest part. Turn halfway through cooking. Cook covered, 20 to 25 minutes on medium hot grill or until fish flakes easily with a fork.

SPECIAL EVENT INFORMATION:
As part of Hunger Action Month, Bay Area Food Bank will be hosting its 14th Annual Chef Challenge – A Challenge to End Hunger, Thursday, September 6, 2012 at Five Rivers Delta Resource Center from 6 – 8:30 p.m. Thanks to Epicurean Sponsor, TRAX Tires, this year’s fundraiser will include tastings of signature dishes from our area’s most prestigious chefs, live music from Roman Street, a vast silent auction and complimentary wine and spirits.

Participating businesses include; Banana Docks Catering, Guido's, The Hungry Owl, Benedetto, Naman’s Catering, The Bull,Cammie’s Old Dutch, Something Sweet, True Midtown Kitchen, Fly Creek Café, The Blind Mule, and Wind Creek Casino & Hotel

Tickets are $50 and are available at any TRAX Tires location and on the food bank’s website, www.bayareafoodbank.org .

Alec Naman serves on the board of directors of Bay Area Food Bank. He has also served as the organization's president. Naman's Catering has been the Premier Caterer for the Gulf Coast for over 15 years, serving Mobile county, Baldwin County and Mississippi Gulf Coast.
