Guinness Irish Potato Salad

March 15,2013 - INGREDIENTS:
6 Medium Potatoes
4 Slices of bacon
1/2 small onion, diced
1 stalk celery, diced
1 teaspoon kosher salt
2 tablespoons butter
2 tablespoons unbleached flour
1/2 teaspoon dry mustard
8 ounces Guinness (beer)
1/2 teaspoon Tabasco
2 tablespoons fresh parsley, chopped

STEPS:
Boil potatoes in medium sized saucepan until just tender
Once boiled peel and slice
Fry bacon until crisp
Break bacon into small pieces and mix with onion, celery and salt; set aside
Stir melted butter and flour in small saucepan until blended
Add mustard
Slowly stir in Guinness and Tabasco
Bring to a boil, stirring constantly
Pour over potatoes
Sprinkle with parsley
Add bacon mixture
Toss lightly and let stand for 1 hour
