INGREDIENTS:
1 package frozen mixed vegetables (12oz)
2 cups Best Yet Brown Rice
1 package of chicken thighs, about 8 thighs
1 can Best Yet Low Sodium Chicken Broth
2 ribs celery, chopped
1 small yellow onion, chopped
2 tablespoons Best Yet Vegetable oil
Salt and pepper to taste
STEPS:
Salt and pepper both sides of chicken thighs. Using a large nonstick Dutch oven, cook seasoned chicken at medium high heat in 2 tablespoons of oil. Cook for 5 to 6 minutes per side. Set cooked chicken aside. In same pan add celery and onion and cook 1 to 2 minutes. Add chicken broth and bring to a boil. Stir rice into broth mixture. Bring back to a boil. Cover, set heat to low and cook an additional 10 minutes. Add vegetable and chicken to pan and simmer for 5 to 10 more minutes.

Stuff the Truck Food Drive for the Bay Area Food Bank:
Our Family to Family food drive is going on at all Food World and Bruno’s locations. There will be a one day food drive with the Bay Area Food Bank this Saturday, Dec. 15th from 9am until 2pm. Locations for the one day drive include Brunos at Old Shell Road, Bruno’s at University and Airport, Food World at Cottage Hill or Food World at Saraland.
Bruno’s and Food World will accept any nonperishable food donations and will also have bags already made in the store that can be purchased for $5 each. The goal for the Stuff the Truck Food Drive is to collect between 1 ½ - 2 trailer loads of food to donate to the food bank for distribution during the holidays and beyond.
Bay Area Food Bank serves a 24-county area spanning 20,000 square miles in south Mississippi, south Alabama and the panhandle of Florida. In 2010, the food bank distributed more than 15 million pounds of food to more than 500 church pantries, soup kitchens and other nonprofit organizations throughout its service area. Bay Area Food Bank also provides food through multiple programs, including Child Nutrition, Disaster Relief, Emergency Response Pantry, Mobile Pantry, Rural Delivery, Senior Nutrition and SNAP Outreach.
