Banana Pancakes

One Meal

INGREDIENTS:  
1 ½ cup uncooked quick oatmeal
1 ½ cup milk
1 cup self-rising flour
2 tblsp sugar
2 eggs
½ cup oil
3 bananas        
    
STEPS:
In a large bowl, mix oatmeal and milk then stir in the rest of the ingredients. Mash up 2 bananas and add to the batter. In an oiled skillet pour ½ cup batter per pancake, cook until light brown on both sides.
Remove and place on a plate and garnish with slices from the 3rd banana. Serve with your favorite syrup

One Meal feeds the homeless and hungry every Sunday afternoon at 4 pm at the church on the corner of N. Dearborn and St. Louis streets.  Donations of all kinds are always needed. You can donate by check or money order payable to One Meal.  In addition to monetary donations, One Meal is also in need of other donations like water, food and supplies.

About the Guest:
Mike McKinley is the father of the young woman that inspired the creation of, and started One Meal.  Mike is also the primary organizer and planner for One Meal.  He was born and raised on Dog River and he and his family now resides in Satsuma. McKinley's family, along with friends and supporters have been feeding those in need for nearly three and a half years. Most importantly, McKinley says they are not funded by the government at all.
