INGREDIENTS:
1 (6 - 8oz) Pork Chop
4 oz of stock
2 oz of truffle oil
2 oz Red wine
3 oz Mushrooms
2 oz Blackberries
2 tablespoon Fresh sage
2 Red peppers, trimmed and sliced
2 tablespoon of garlic, chopped
Olive oil
Blackberry ginger balsamic vinegar
STEPS:
Toss red peppers in truffle oil and roast in 375 degree oven until tender. Set aside.
In a saute pan, heat olive oil and sear pork. Add wine and stock to pan. Add mushrooms simmer until tender. To serve, place pork on plate, top with mushrooms and sauce. Garnish with blackberries, sage, roasted peppers and blackberry ginger balsamic vinegar.

The Happy Olive is celebrating it’s grand opening on Thursday, Dec. 5, 2012 from 10:00 a.m. to 5:00 p.m. A ribbon cutting ceremony will be at 4:45 p.m. with the Eastern Shore Chamber of Commerce. The Happy Olive will also be offering educational after-hours tastings and private parties to groups, supper clubs, etc.

The Happy Olive owner Vickie Bailey and her husband, Richard, became interested in this concept while traveling to visit their daughter in Italy, who is married to an Italian man with a family olive orchard. Vickie and Richard have made numerous trips to this orchard, where they have participated in many harvests bringing family and friends. They have grown passionate about the many health benefits of extra virgin olive oil & balsamic vinegars and are eager to share this concept with the community.
