Blackened Shrimp Grilled Cheese

Ingredients:
8oz. Melted unsalted butter
8 Thick slices of Sourdough Bread
8 Slices Gouda or American Cheese
¾ Lb. 90-110 Peeled baby shrimp
3 Tbls Joe & Daves YaYa Spice
1 Qt. Original Oyster House Gumbo
1 cup Cooked Rice    
8 Dill Pickel Slices for garnish    

Steps:
In a small bowl toss shrimp, 3 oz. Melted Butter & Joe&Dave’s YaYa spice.
Place in a hot dry skillet and blacken. Remove and set aside.
Brush one side of each side of bread with melted butter and place on grill or grill pan.
Top each slice of bread with 1 slice of Gouda or American cheese.
Top four of the slices with Blackened Shrimp mixture.
Toast to a golden brown and fold sandwich together, turning over on grill.
Remove from heat, cut in half, garnish each half with ta pickle slice and a frill toothpick.
Serve on a platter with a cup of gumbo and rice. Enjoy!

About the Guest:
Joe Roszkowski & David Dekle – Owners - The Original Oyster House Restaurant, is the result of two dedicated men. Joe Roszkowski and David Dekle started their successful local seafood restaurants in 1982. Joe was Executive Chef at the Gulf State Park in Gulf Shores, Alabama when he met his soon to be business partner David Dekle. David worked for a local distribution company, Fruit Distributing when he made a sales call to Joe at the State Park this began their business relationship and the start of their partnership. Joe Roszkowski is President, David Dekle is Vice-President and Mary Lou Roszkowski is the Director of Operations.

Richie Pippin is the Kitchen Manager at the Original Oyster House on the Causeway.
