INGREDIENTS:
2 Chicken breast
1 Tbl Olive oil
2 oz Pancetta
Salt and pepper to taste
2 oz White wine
3 oz Grapes
10 oz Chicken stock
3 oz. Polenta
2 oz. Gorgonzola cheese
2 oz Parmesan cheese
2 oz Smoked cheese
1 Red Pepper (cut in half)
STEPS:
Sauté chicken in olive oil and pancetta. Season with salt and pepper and add wine, 2 oz. of chicken stock and grapes. Lower heat and simmer until done.
To roast the red pepper, cut it in half, toss it in some garlic and olive oil and place on a baking sheet. Put in 350 degree oven for five to 10 minutes.
For the Polenta, heat the rest of the chicken stock (8oz) until boiling. Add polenta and cheeses and stir until thickened. Stuff roasted red pepper with cheese and bake until golden brown
