Chicken and Sausage Etouffee

INGREDIENTS:
2 green peppers, diced
1 red onion, diced
4 or 5 stalks of celery
1/4 cup unsalted butter
1/4 cup all purpose four
2 or 3 Tbsp tomato paste
3 cups chicken stock
4 cups diced chicken breast
3 cups sliced sausage
1 Tbsp Tony's
Hot sauce to taste
Salt and pepper to taste

STEPS:
In a stock pot, add your butter and veggies and sauté until almost soft. Add flour and stir. Keep stirring until light rue forms. Add warmed chicken stock slowly. Add chicken and sausage. Add tomato paste and seasonings. Let simmer until chicken is cooked through. Serve over white rice.
