INGREDIENTS:
1 1/2 C Baked or Grilled Chicken
4 - 10 inch Flour Tortillas
1/2 C Enchilada Sauce
1/2 C Onion
1/4 C Black beans
1 1/2 C Mozzarella Cheese
1 1/2 C Pepper Jack Cheese
1 C Sour Cream
1/4 C (bunch) Cilantro
STEPS:
Preheat oven to 375 degrees
Spread sauce in the bottom of a 9x13 baking dish
Cut edges off tortillas
place chicken, cheese, beans, onions, cilantro, a dash of sauce on each tortilla
Roll tortillas up seam side down in a 9x13 inch baking dish. Sprinkle the remaining Mozzarella and Pepper Jack cheese on top, then pour enchilada sauce over all.
Bake for 30 minutes in the preheated oven.
