INGREDIENTS:
Two chicken breasts, cut in cubes
Yellow corn flour
Juice of half a lemon
½ tsp Cumin
Green chilies
Chili powder
Fresh ginger and garlic paste
2 tbsp Ketchup or tomato sauce
1 tsp Soy sauce
½ large yellow onion, cut into large pieces
½ Green pepper, cut in large pieces
½ Red pepper, cut in large pieces
Cooking oil
STEPS:
Mix lemon juice, cumin, ginger/garlic paste, and salt to taste in a small bowl. Marinate chicken cubes for a few minutes.
Roll the chicken cubes in the yellow corn flour and fry the chicken cubes. Cook chicken for 5 to 6 minutes. Drain and set aside.
Heat some cooking oil in a wok or large skillet, add some ginger/garlic paste and cook until golden brown. Then add the chopped onions, green, and red peppers, cook for 2 minutes and then add the fried chicken cubes. Add ketchup, soy sauce, green chilies and chili powder to the chicken. Continue to sautee for another minute or until chicken pieces are thoroughly coated with sauce.

Gorkha Badhadur Tamang is the head chef at Yak the Kathmandu Kitchen. He has been cooking Indian, Nepali, and Tibetan dishes for more than 15years. He started his cooking career in the early 1990s with the Himalayan/Mountains Climbers. Gorkha has been to several 8,000 height mountains of Nepal with climbers and fed them authentic dishes. He came to USA 5 years ago, and he has been to Colorado, New York, and Texas. Gorkha now calls Mobile home.
