INGREDIENTS:
12 oz Smoked pork
2 Green bell peppers, diced small
1 Onion, diced small
1/2 bunch Cilantro, chopped
2 cans Coconut milk
2 tbl Curry paste
2 cups Pineapple tidbits
2 oz Fresh ginger
1 qt Half and half
2 tbl Olive oil
Salt and Pepper to taste.
STEPS:
In a stock pot, sweat down onion and bell pepper with olive oil. Add pineapple tidbits, curry paste and fresh ginger, stir gently to combine. Then add half and half and coconut milk. Bring to a boil and add ork and cilantro. Salt and pepper to taste. Serve with rice or crusty bread.
