Ingredients:
¼ lb. butter
½ bunch diced green onions, tops and bottoms
½ cup white wine
½ tablespoon each: dried leaf thyme, dried leaf basil, granulated garlic,
1 dash teaspoon cayenne
6 tablespoons all purpose flour
2 cups hot chicken broth
2 cups hot 1/2 & 1/2 cream
3 tablespoons tomato paste
½ to 1 pound cooked crawfish tails
1 pound cooked pasta
Steps:
Braise green onions in butter 2 minutes
Add wine, reduce 3 minutes
Add seasoning, cook 1 minute
Add flour, using a wire whisk, whisk and cook 2 minutes until blended
Add broth, whisk until blended
Add 1/2 & 1/2, whisk until blended
Add tomato paste, stir until dissolved
Add ½ to 1 pound cooked crawfish tails (fat and juices included) to sauce and blend together.
Plate:
Ladle over your choice of cooked pasta; serve with crusty french bread and a simple vinaigrette salad.
About the Event:
'Mudbugs in the Swamp' is the Junior Executive Board‘s annual fundraiser. 2012 will be 8th year for the event, which has raised over $100,000 for the fight against cancer since it's establishment.
Mudbugs in the Swamp will be Thursday, May 10 from 6:30 p.m. to 9:30 p.m. at Felix’s Fish Camp on the Causeway. There will an abundance of crawfish, your favorite cold refreshments, silent auction as well as live entertainment provided by Spring Peach Duo and Rez and the Solutions.
Tickets are $20 in advance and $25 at the door and can be purchased from any JEB member or from the American Cancer Society office at 900 Western America Circle, Suite 101 in Mobile.
