Creole Shrimp Moutarde En Boule

Chef Michael Myers from Flippers Restaurant shows you how to cook Creole Shrimp Moutarde En Boule.

Ingredients:
2 t. butter
1 t. diced shallots
10 ea. peeled / deveined Alabama wild shrimp
2 oz. pinot grigio white wine
3 oz. heavy cream season to taste
2 t. Zatarain's creole mustard
2 oz. diced fresh tomato
1 t. diced fresh chives
1 ea. sourdough boule
6 oz. Elberta sausage

Steps:
Saute shallots in butter, add shrimp and season salt (Cavender's Greek)
Cook 2 minutes each side, deglaze with wine.
Add cream and reduce to desire thickness (1-2 minutes)
Add creole mustard and blend in well, add tomato and chives.
Spoon into toasted sourdough bread bowl which has top removed and partrial interior removed.
Cut grilled Elberta sausage along rim of bread bowl
Garnish as desired.

About the Guest:
Chef Mike has been in the restaurant business approximately 35 years. He has worked in the Scottsdale/Phoenix area and Northern California and here on the Gulf Coast. He's worked at Hemingway's Restaurant, Nolan's Restaurant in Gulf Shores 12 years, Lester's restaurant for four years and  Flippers restaurant for four years.

Chef Mike was nominated in the 2004 National Restaurant Association for chef of the year. Chef Mike and Flippers were in the August 2010 edition Southern Living Magazine for their Greek-style grouper.

Special Event:
The Annual National Shrimp Festival presented by Zatarain's is held each year during the second full weekend in October on the beautiful beaches of Gulf Shores. This year it is October 11-14.

A group of generous sponsors allows for the festival to be a free event every year.

The Festival is held at the public beach access in Gulf Shores where Hwy. 59 ends and intersects with Hwy. 182.

The festival is one of the nation's premier outdoor festivals attracting 250,000 people, featuring over 250 vendors that offer fine art, arts & crafts, a retail marketplace and of course, SHRIMP!

Two stages offer continuous musical entertainment while the little one's attention is captured in the Children's Activity Village. They can create their own "art" and participate in other fun-filled activities.

You can also get the entire family involved in the family friendly sand sculpture contest.
