Filet Mignon with Mashed Cauliflower and Feta

Ingredients:
6 oz. Filet
1 head Cauliflower
2 tbsp Roasted garlic
2 oz. Feta cheese
2 tbsp Olive oil
1 tsp Sea salt
1 tsp pepper
 
Steps:
Boil cauliflower until soft.
Drain and mash with potato masher or use food processor
Fold in roasted garlic and feta cheese
Add olive oil, salt and pepper to taste
 
Grill or saute Steak to desired temperature and place on top of mashed cauliflower.
Drizzle balsamic vinager over steak and cauliflower.

About the Chef:
Chef Scott Dumas started his career in the 90's at Southern Traditions in Biloxi, MS. He initially trained under chefs Frank Burgess and Joe St. Paul where Chef Dumas says that he learned methods rather than recipes. It is this philosophy that a true Chef must understand the ingredients and methods of any style of cooking before you can master that style or recipe. Italian cooking is the prime example of that philosophy.
