Fish Tacos

The Bake Shoppe Café

INGREDIENTS:
2 flour tortillas (6")
3-5oz. of Talapia (or choice of mild white fish)
Shredded lettuce
Shredded cheddar cheese
Olive oil
Corn & Black Bean Salsa (see recipe below)
Tangy Mayo (see recipe below)
Seasoning mix: Garlic, Salt and Pepper

STEPS:

Lightly brown fish in olive oil and lightly coat fish with seasonings. Flip after 21/2 minutes. Flip again after 2 1/2 minutes or until completely cooked.  Heat tortillas in saute pan or in microwave.  Cut fish length wise and place 1/2 on each tortilla.  Top with shredded cheese and lettuce.  Then spoon some corn and black bean salsa on top and drizzle with the tangy mayo.

TANGY MAYO:
1 c. mayonnaise
1/2 c. ketchup
1/4 c. hot sauce
season with garlic, salt and pepper
Mix all ingredients together in a small bowl (mix well).

CORN & BLACK BEAN SALSA:
1 can corn
1 can black beans
1/2 of a yellow onion (diced)
1/2 of a green pepper (diced)
small tomato (diced)
1/4 c. olive oil
1 tsp. vinegar
season with garlic, salt and pepper
Combine the corn, black beans, onion, pepper and small tomato into a small bowl. Add olive oil and vinegar and season to taste.

The Bake Shoppe Café offers a full lunch and dinner menu with soups, salads, sandwiches, wraps, Panini's, steaks, seafood, cakes, pies, pastries and catering.  There are daily specials, desserts and has a full made to worder bakery.

The Central Baldwin Chamber of Commerce's "Flavors of the South," is being held at St. Patrick School Gym, 23070 State Highway 59 North, in Robertsdale on Thursday, July 28th, from 5:30 p.m. - 8:00 p.m. Tickets are $25.00. This event showcases food and wine from local restaurants and caterers.  You will bet to sampl a variety of food and drink while listening to music and mingling.  There will also be a silent auction.

  About the Guest:
Juan Martinez was born in Caracas Venezuela.  He moved to Naples, Florida in 1988.  He grew up cooking with his family and then went on to attend the Walker Institute of Technology.  After working in the food industry for 14 years, he and his wife Jessica, decided to open The Bake Shoppe Café & Grill in 2010.  His focus is to bring creative and fresh foods to the area.  Each meal is prepared fresh to order.
