Fried Green Tomato and Avocado BLT

INGREDIENTS:
4 slices of green tomato
2 slices of bacon
lettuce
avocado
ciabatta bread
roasted garlic mayo
seasoned flour 
half and half
Butter

STEPS:
Slice tomato in to 3 slices
Dredge tomatoes in seasoned flour
Heat butter in skillet
Pan fry tomatoes till golden brown
Cook bacon till crispy
Toast bread
Place tomatoes on bottom then bacon, next lettuce and then avocado. To finish it we spread the garlic mayo on top portion and place on top. Cut diagonally and serve

About the Guest:
Chef Derek is a Mobile native. He attended Culinary school in Mobile at the Culinard, where he received his degree in the culinary arts. After graduation he went to Italy for his externship. Upon returning to Mobile he took the Executive Chef position at the new Bojangles.
