Grilled Corn and Corn Beignets

The Wash House Restaurant shows you how to make two dishes, Mexican Style Grilled Corn and Corn Beignets w/ Habanero-Honey Drizzle.

Mexican Style Grilled Corn:

Ingredients:
Grilled whole ears of corn
Mayonnaise
Chili powder
Dry white cheese(ex. Parmesan, cotija, manchego)
Fresh lime zest
salt and pepper

Steps:
Coat grilled corn in mayonnaise.
Roll in mixture of cheese, chili powder, lime zest, salt and pepper

Corn Beignets w/ Habanero-Honey Drizzle:

Habanero-Honey Ingredients:
1 Cup good quality honey
1 habanero chili

Steps:
Heat honey with a couple tablespoons of water
Slice habanero from bottom to top, and place in honey over low heat for 15 minutes.
Remove the habanero and discard.
Reserve honey.

Corn Beignets Ingredients:
1 small onion, diced
4 cloves of garlic, diced
1 ½ cups of corn kernels
1 jalapeno, diced
1 bunch parsley, finely chopped
3 ¼ cup flour
3 Eggs
1 ½ cup half & half
2t baking powder
1 T Paprika
Pinch of salt

Process for beignets:
Sauté onion, garlic, jalapeno, and corn kernels until onions are translucent.
In a mixing bowl combine eggs, flour, half & half, baking powder, paprika, salt and parsley.
Add sautéed mixture to batter.
Refrigerate batter for 30 minutes.
Using an ice cream scoop slowly add batter to 375 degree oil.
Turning beignets until cooked on all sides and in the center.
Dip ice cream scoop in warm water between each beignet.
Remove using a slotted spoon and place on a plate lined with a paper towel.
Drizzle with habanero-honey, and top with powdered sugar and chives.
