Pan Roasted Grouper with Creamy Yellow Corn Grits Ingredients:
Grouper Filet, 8 Ounce
Olive Oil
Whole Butter
Thyme Sprig
Salt and Pepper
Steps:
Heat a skillet to a fairly high temperature.
Add oil to the skillet.
Season the fish with salt and pepper and carefully add the fish to the pan. Cook the fish for approximately 1 minute, on the range then add the butter and the thyme to the pan and put the pan in a 350 degree oven.
Note: We are trying to caramelize the fish on one side throughout the cooking process. Do not turn the fish over until ready to serve.
Oyster Mushroom Ragout & Petit Vegetables Ingredients:
½ lb Oyster Mushrooms
4 oz Olive Oil
2 TBL Shallots
1 each Thyme Sprigs
1 cup of red wine (cabernet or merlot)
1 cup Concasse Tomato
4 cups Veal Demi Glace (you can find this at your specialty grocer)
2 TBL Fines Herbs (equal parts chopped chives, chervil, tarragon and parsley)
Salt and Pepper to taste
Steps:
Toss the mushrooms in the olive oil and roast them on a baking sheet in a 350 degree oven for about 20 minutes.
The mushrooms should be well roasted. Sweat the shallots in a sauce pan with a table spoon of oil.
Add the red wine and the sprig of thyme.
Let simmer until the red wine has reduced by half.
Add the concasse tomato, wild mushrooms and the veal demi glace.
Simmer and reduce to a sauce consistency.
Mount the sauce with cold butter, then add the fines herbs and season with salt and pepper to taste.
Creamy Yellow Corn Grits Ingredients:
Chicken Stock
Heavy Cream
Salt and Pepper
Yellow Corn Grits
Steps:
Bring the chicken stock, heavy cream, salt and pepper to a boil on the range top.
Stir in the yellow corn grits while stirring constantly so that no clumping occurs.
Turn to a simmer and cook out the grits until they are fully bloomed and tender.

About the Guest:
Ira Gallon joined The Hangout team in March of 2012 to serve as Executive Chef. Just prior to joining The Hangout, Ira served as Executive Chef for The Charlie Palmer Group for Las Vegas’ prestigious Stirling Club as well as opening the Joule Hotel in downtown Dallas Texas for the restaurant group. Ira worked for Charlie Palmer from 2005 until 2011.
In 1999 Ira Joined with China Grill Management and played an integral role opening four of their independent restaurants within Mandalay Bay Resort, Hotel and Casino in Las Vegas. He previously participated as Chef in two openings for their “China Grill Café and Zen Sum” concepts in the Fort Lauderdale area. In 2003 Ira served as consultant and Executive Chef for
the Hard Rock Hotel and Casino in Hollywood, Florida overseeing their Park Sports Club and Tequila Ranch restaurants.
He joined this South Florida effort after serving as Chef de Cuisine for four years at the exclusive White Oak Plantation, on the St Mary’s River in North Florida.
Additionally, Chef Gallon’s experience has included work with Chef Norm Van Aken in South Beach, Miami and Chef Bradley Ogden at both Lark Creek Inn in Larkspur, CA as well as One Market property in San Francisco.
His passion for the trade and pride in his efforts, tied to his focus on continual staff training with progressive American cuisine has earned him a position to participate in a lead role as The Hangout continues to grow.
In his limited leisure time, very limited, Ira enjoys time with his children as well as traveling when possible. Chef Gallon grew up in Queens, New York.
