Holiday Crumb Cake

INGREDIENTS: Cake
2¼ cup all-purpose flour
3 tsp. baking powder
½ tsp. salt
1 stick butter. softened
1 cup sugar
1 egg
2 tsp. vanilla extract
¾ cup milk

STEPS:
Preheat oven at 350 degrees.

In a large bowl, Sift flour, baking powder and salt together. Set aside.

In a separate bowl, cream butter with sugar until fluffy.  Beat in egg and vanilla.  On low speed, blend in dry ingredients alternately with milk until smooth. 

Pour into greased 13 x 9 baking pan.  Bake at 350º for 15 minutes.

While cake is baking, prepare topping

INGREDIENTS: Crumb topping
1½ cups all-purpose flour
1½ cups sugar
¾ tsp. cinnamon
½ tsp. nutmeg
1½ sticks butter

STEPS:
Combine flour, sugar, cinnamon, and nutmeg in a bowl.  Work in butter until mix is crumbly.  Sprinkle over partially baked cake.  Return to oven and continue baking for 15 more minutes or until center springs back when lightly touched.

Let cool and cut into squares.  This cake is even better the next day!
