Hot Chicken Salad

Azalea Trail Court Cookbook

Ingredients:
2 cups cubed chicken
1 cup celery, chopped
1/2 c mayonnaise
1 can cream of chicken soup
1/2 tsp salt
2 Tbs grated onion
2 Tbs lemon juice
1 1/2 cups grated cheese
1 1/2 cups crushed potato chips

Steps:
Mix all together, except the cheese and crushed potato chips.
Pour into rectangular baking dish and cover with cheese and potato chips.
Bake at 275 degrees for 30 minutes.

About the Azalea Trail Maids:
The Mobile Azalea Trail had its beginnings in 1929 when the Mobile Alabama Junior Chamber of Commerce, or Mobile Jaycees, undertook a project to encourage citizens of Mobile to plant azaleas along the Port City's thoroughfares.  

Four local high schools were asked to appoint two senior girls to serve on what was to become the first Azalea Trail Court.  The Azalea Trail Court became so popular that the sponsoring organization, the Mobile Jaycees, expanded the program to 50 senior girls from Mobile County's high schools.  

The Azalea Trail Court has since expanded its role to representing Mobile on a year-round basis at hundreds of civic events.  The Trail Maids are recognized nationally as representing the finest in Southern charm and hospitality.  The Trail Maids serve as ambassadors for Mobile and all of Alabama at a number of national events each year.

Each Azalea Trail Maid is selected to participate in the Court based upon her scholastic achievement, knowledge of area history and awareness of ongoing local and national events.

The Azalea Trail Court is composed of six dress colors.  The Azalea Trail Queen is the only lady to wear pink.  The other colors include blue, green, yellow, peach and lavender.  Each dress is individually designed by the Trail Maid and handmade by a local seamstress.

About the Cookbook:
Every year, each trail maid submits roughly 80 recipes that they collect from family and friends. These recipes are compiled to make the Azalea Trail Cookbook.

If you wish to purchase an Azalea Trail cookbook, you may contact the Mobile Jaycees at 251-471-0025. The trail maids will have a calendar coming out later this year that highlights local attractions. These may be purchased from the Jaycee office as well.

About the Guest:
Holly Taylor is the queen for the 2012-2013 Mobile Azalea Trail Court. She attends Satsuma High School. Her mom, Cathy Taylor, was an Azalea Trail Maid as well, and Holly designed her dress using some of the same elements that were found in her mom’s dress.
