Joe and Dave's Alligator Jambalaya

INGREDIENTS:
1 Tbs vegetable oil
1 pound gator tail meat, cut into 1/2 inch cubes
1 pound smoked sausage, cut into 1/4 inch slices
1 med. red onion, chopped
1 med. gred bell pepper, chopped
1 celery rib, chopped
1 med. tomato, chopped
2 Tbs Joe and Dave's YaYa Spice
2 bay leaves
1 cup long grain rice
1 3/4 cups chicken stock
1/4 cup Joe and Dave's Garlic Sauce

STEPS:
Heat oil in large heavy skillet on medium-high heat; add gator meat and sausage.  Cook and stir five minutes and then remove from skillet.

Pour off the excess oil.  Add onion, bell pepper and celery; cook and stir over medium heat until onion is softened.

Stir in tomato, YaYa spice and bay leaves.  Then return gator and sausage to pan.  Add rice, stock and garlic sauce; bring to a boil.  Reduce heat to low; cover and cook 25 minutes or until rice is tender, stirring occasionally. Remove bay leaves before serving.

About the Restaurant:
The Original Oyster House Restaurant, is the result of two dedicated men. Joe Roszkowski and David Dekle.

The two men started their successful local seafood restaurants in 1982. Joe was Executive Chef at the Gulf State Park in Gulf Shores, Alabama when he met his soon to be business partner David Dekle. David worked for a local distribution company, Fruit Distributing when he made a sales call to Joe at the State Park. That began their business relationship and the start of their partnership.

Joe Roszkowski is President, David Dekle is Vice-President and Mary Lou Roszkowski is the Director of Operations.

Richie Pippin is the kitchen Manager at the Original Oyster House on the Causeway.
