INGREDIENTS:
1 whole Lamb Shank braised in figs and red wine
2 tbs of greek olive oil
2 cups White beans (cooked)
1/2 cup roasted tomatoes sauce
2 tbs of candied garlic
1/4 cup of chopped fresh thyme oregano and rosemary
1/2 cup fine dice miri poix(celery carrots onions)
1/2 bunch rapini cooked
1/4 bulb fennel roasted
1/4 cup feta cheese
1 tbs greek yogurt
1 tbs lemon zest and mint
STEPS:
In a sauté pan cook down your miri poix, fresh herbs and candied garlic.
Then add your beans and tomato sauce. Cook down for a minute on medium low heat, add rapini and fennel and cook down for another minute.
Then finish beans with feta cheese and lay lamb over top. Pour some braising liquid over top and a spoonful of greek yogurt on top of lamb.
