Meatloaf stuffed with Cheese and Peppers

INGREDIENTS:
Beef (80/20)
Trinity (mixture of diced onions, garlic, peppers)
Creole Mustard
Eggs
Bread Crumbs
Parmesan Cheese
Worcestershire Sauce
Dried Parsley
Green Onions (chopped)
Aldust (house seasoning)

(for stuffing)
Pepperjack Cheese
Cheddar Cheese
Smoked Gouda
Purple Onion (sliced)
Bell Pepper (sliced)

STEPS:
Mix everything (except the stuffing ingredients) together.  Use your hands to make sure it is mixed well.  Take half the mixture and create an oblong bowl out of it (about the size of your hand).  Place slices of each cheese and the red purple onion and pepper inside and fold edges on top.  Reshape into the size of a dinosaur egg.

Take the other half of the meat mixture and repeat.

Wrap each Meatloaf with strips of bacon.

Bake at 350 degrees for 25 minutes.

Serve with green beans and mashed potatoes (or your favorite sides).

The Hungry Owl is a southern creole restaurant with a casual feel.  It was made famous by the Tony burger featured on the Travel Channel’s “Man v. Food Nation”.  In addition to daily lunch and dinner menu, The Hungry Owl can also cater your next event.

About the Chef:
Chef Tony Nicholas is the proud owner of one of Mobile's hot spots for lunch and dinner - The Hungry Owl.  Tony opened The Hungry Owl in September of 2008 in a small space along Schillinger Road that seated about 40 people. It didn't take long for word to get out and his restaurant was always packed. It gave him the incentive he needed to build a larger space. Tony moved the restaurant less than a block away to Cottage Hill Road where The Hungry Owl now seats 200. The bigger restaurant even has a porch where you can bring your dogs and enjoy live music while you dine.

Upcoming Event:
The Hungry Owl is holding its first Crawfish Boil Saturday, February 23, 2013.  You can dine in or take out Crawfish with all the fixin's.  Kona Brewing Company will also be on hand for a beer tasting.
