Mediterranean salsa bruschetta

INGREDIENTS:
12 Crostinis
2 Cups of Seeded Diced Roma Tomatoes
¼ Cup of Diced Red Onions
½ Cup Chopped Kalamata Olives
½ cu of Basil Chiffonade
½ Cup of Extra Virgin Olive Oil
¼ Cup Balsamic Vinegar
4 oz Feta Cheese (crumbled)

STEPS:
Combine all ingredients and toss. Season with freshly cracked pepper and Kosher salt.
Spoon Salsa over crostinis
Sprinkle with Feta Cheese
Drizzle with reduced Balsamic – recipe follows

Reduced Balsamic Vinegar

Simmer 1 cup of Balsamic Vinegar on low heat until reduced to ¼ of cup.

Crostinis

Slice French bread into ¾ inch slices
Brush with herb infused oil
Sprinkle with salt and pepper and grated parmesan
Bake at 350 degrees for 5 minutes or until crisp and lightly browned

Makes approximately 12 crostinis – serves 4 guests (3 crostinis each)

SPECIAL EVENT:
The Junior League of Mobile presents the 28th annual Christmas Jubilee Holiday Market. You can shop for everyone on your holiday shopping list at the Greater Gulf State Fairgrounds. The event features more than 100 merchants from around the country.

The Christmas Jubilee is the primary fundraiser for the Junior League of Mobile. The Holiday Market has raised more than $4 million dollars since its inception.  For the fifth consecutive year, Christmas Jubilee has been named one of the Southeastern Tourism Society’s Top 20 Events.

Dates and times for Christmas Jubilee:
Thursday, November 15:
10:30 a.m. – 8:00 p.m.
Friday, November 16:
9:00 a.m.– 9:00 p.m.
Saturday, November 17:
9:00 a.m. - 6:00 p.m.

Tickets may be purchased in advance for $8, $10 at the door, children ages 6-12 are $3, and children 5 and under are admitted free. Parking at the Fairgrounds is $3 per car.

Junior League of Mobile is also hosting a Preview Gala on Wednesday, November 14 from 7:00 p.m. to 10:00 p.m. There will be food, entertainment and a chance to bid on exclusive and unique silent auction items. Holiday attire is required and attendees must be over 21 years old. Admission is $50 per person.
