Orange Chicken Stir Fry over Wild Rice

INGREDIENTS:
2 teaspoons vegetable oil
1 pound thin-sliced boneless skinless chicken breasts, cut into strips
1 cup fresh squeezed orange juice (2-3 oranges)         
1 tablespoon cornstarch                        
1 tablespoon reduced-sodium soy sauce
2 tablespoons grated fresh ginger    
½ cup sliced green onions    
1 cup sliced carrots
6 ounces snow peas, ends trimmed
¼ teaspoon red pepper flakes (optional)

STEPS:
Prepare Wild Rice according to package direction (do not under cook) and set aside.  

Heat vegetable oil in large skillet over medium-high heat.  Add chicken; cook and stir 4 to 6 minutes or until centers of chicken are no longer pink.  Remove from skillet and keep warm.

Whisk together cornstarch, orange juice and soy sauce; add to skillet.  Bring to a simmer, stirring frequently.  Add ginger and onion, stirring constantly, about 1-2 minutes.  Add carrots and snow peas.  Simmer 3-4 minutes uncovered until carrots are just crisp-tender.  Return chicken to skillet: heat 1-2 minutes or until heated through.    Let stand 3-5 minutes uncovered for flavors to set in.  

Serve chicken mixture over wild rice and top with red pepper flakes, if desired.

Makes 4 servings (1/3 cup wild rice and 1cup chicken mixture per serving)

In recognition of November as National Diabetes Awareness Month, Mobile Infirmary Diabetes Education and Resource Center (DERC), Thomas Hospital Diabetes Center and the American Diabetes Association join forces to emphasize the importance of early detection. The group presents “Living Well With Diabetes” health fairs at locations in both Mobile and Baldwin Counties.

The health fairs are free of charge and open to the public. It includes blood sugar screenings, food samples, and a lecture on diabetes health; vendors are available with the latest information on diabetes education and products.
