Picadillo:Creole Beef Hash over Rice and Plantains

INGREDIENTS:
5 lbs. Ground Beef
2 C Potatoes (cooked and sliced)
1 C Olives
1 C Raisins
2 cans Tomato Sauce
4 tsp Garlic Powder
4 tsp Oregano
Sazon seasoning (to taste)
5-6 Bay Leaves
Salt and Pepper (to taste)
1 Onion
1 Bell Pepper
2-3 Plantains
4 C White Rice
Garlic Cilantro Mojo  (to taste)

STEPS:
Prepare Sofrito base: In a small frying pan, 1 can tomato sauce, chopped onion and bell pepper. Add salt, 2  tsp garlic, pepper and sazon comleta to taste. 
Brown ground beef then add salt, 2 tsp garlic and pepper generously. Add chopped cooked potatoes, 4 tsp oregano and sazon. Add 1 can of tomato sauce.  Simmer for 10-15 minutes.  Add olives, raisins and 5-6 bay leaves, cover and let simmer for another 10 minutes.
Fry Plantains:  Cut ripe plantain into slanted slices, deep fry for about 10 minutes.
Serve Picadillo over rice and decorate with fried plantains. Top with Garlic Cilantro Mojo (green stuff).

Momma's Mojo focuses on Cuban Fusion cuisine.  In addition to the cafe, Momma's Mojo has a food truck that travels all over the Mobile and Baldwin County.

Special Events:
Momma's Mojo Food Truck will be at the Wharf on New Years Eve for the New Years Eve celebration. They will also be selling their Garlic Cilantro Sauce - nick named by customers as "Green Stuff Mojo." 
Also, the Food Truck is available for special events, catering and parties.  It's daily schedule is posted on Momma's Mojo facebook page .

About the Guest:
America "Maggie" Lamorell relocated to Mobile, Alabama in April of 2011 from Miami, Florida. She noticed a lack of cuban food in the Mobile area and decided to share her mother's culinary experiences with the community.
