INGREDIENTS:
Large pork loin
3 oz Spinach
2 oz Garlic
2 oz Butternut squash
1 Onion, chopped
8 oz White wine
16 oz Chicken stock
Rosemary and sage
Salt
Pepper
Red pepper flakes
 
STEPS:
Preheat oven to 375 degrees.
 
Ask butcher to “unroll” the pork loin or slice pork loin so it can be stuffed.  Then, season pork loin generously with salt, pepper and red pepper flakes.  Set aside.
 
In a medium pan, slightly sauté spinach, garlic and butternut squash.  
 
Evenly spread mixture over pork loin. Roll pork loin and tie with butcher string.
 
Place in a roasting pan with fresh herbs, wine and chicken stock.  Cook for 25 to 30 minutes until internal temperature reach 155 to 165 degrees.  
 
Slice and serve with choice of vegetables.
