Rigatoni carbonara with Italian sausage

INGREDIENTS:
3 cups heavy cream
3 egg yolks
1 1/2 cup Pecorino Romano cheese
1/2 cup chopped crispy pancetta or bacon
Fresh cracked pepper
1 Tblsp butter
4 pieces of italian rope sausage
1 1/2lb rigatoni pasta, cooked

STEPS:
Put cream in a medium sauce pan and reduce by a third.

While cream is reducing, whisk in cheese incorporate. 

After cream has thickened, add chopped pancetta or bacon and butter.

Reduce heat to low heat, whisk in egg yolks.  Add fresh cracked pepper and check to see if there is a need for any salt.

Grill or brown off Italian sausge.

Toss cooked pasta with sauce, plate it and lay cooked pasta on top of pasta.

Yields 4 servings
