Sauteed Shrimp

INGREDIENTS:
Fresh Gulf Shrimp (6/person)
½ Cup Julienne Sun-dried Tomatoes
2 Handfuls Fresh Spinach
¾ Cup Chopped Scallions
½ Cup White Wine
3 Tablespoons Butter
Greek Seasoning to Taste

STEPS:
Heat up your butter then add shrimp, seasoning and sun-dried tomatoes. Sautee till shrimp begin to turn pink.

Add scallions and deglaze with white wine.  Allow to cook down

Add spinach. Toss and let cook for approximately another one to two minutes.

Serve your shrimp over Risotto.

More than 40 restaurants and caterers will be showcased at the Taste of Mobile. Each will offering a sampling of their finest cuisine or beverages and hospitality. Entertainment and a silent auction round out the spectacular culinary evening hosted by the Mobile Chapter of the Alabama Restaurant Association and benefiting Goodwill Easter Seals.

Auction items include a 51” LG 3D HDTV with blu-ray player and 10 sets of 3D glasses; an autographed Jimmy Buffett guitar; four tickets to the Saints v Panthers at the Superdome on New Year’s Day; original artwork by Kathy Whitinger, Eugenia Foster, Daniel Moore and others; spa packages, gift certificates and more!

ABOUT THE GUESTS:

Emmanuel Theris was born in Italy and raised in France.  Hel brings his own international flair to the Georgia Roussos Catering kitchen. He was hired as a chef in August of 1999 and spent the next year and a half training under Mr. George Roussos in the family processes in the Roussos Restaurant kitchen.

Emmanuel takes great pride in the creativity of food service. He enjoys putting together new menus for each event. According to Emmanuel, “Caterings really give me the opportunity to express my creativity in new ways.”

His outside interests include fitness and music; he plays the guitar and was once a member of a band. He and his wife Eleni were married in May of 2011. He is a member of the Annunciation Greek Orthodox Church.


Georgia Roussos started her catering business after years of working in her family's restaurant.

Many of you met Georgia for the first time at Roussos Seafood Restaurant. While her father and brothers were busy keeping things running smoothly in the kitchen, it was Georgia Roussos who provided the non-stop energy for the dining rooms at the restaurant. She worked closely with the hostesses and servers to ensure that every customer enjoyed their visit and felt like a part of the Roussos family.

Now that feeling of family is the key philosophy that drives Georgia Roussos Catering. Georgia works hard to make sure that each catering event runs smoothly, that each guest feels welcome, that each client is thrilled with the results.

"My family always felt that our restaurant was an extension of our home," Georgia says. "And I want to instill that emotion into every catering we do. I want people to feel welcome, to feel at home."

Georgia graduated from the University of South Alabama in 1981 with a degree in business management. She is a member of the Junior League of Mobile and the Annunciation Greek Orthodox Church. She is the proud parent of son Slater and daughter Nia. And she treasures time spent with her husband Les.
