Ingredients:
Sea Scallops
Kelp caviar
1 tbsp Olive oil
1/2 bunch Basil fresh, chopped
1 cup Aborio rice
1 cup Chicken stock
1/2 cup White wine
2 tbsp Garlic
3 oz. Asparagus, chopped
1/4 cup Parmesan cheese
1 tbsp Butter
1 tsp Sea salt
Steps:
In large pan heat olive oil, saute garlic for a few seconds
Add rice and slowly add wine and chicken stock until rice absorbs liquid.
Fold in chopped garlic and asparagus.
Add cheese and butter.
Stir until blended.
Should have creamy consistency.
Sear Scallops in saute pan, top with caviar.
Drizzle with olive oil.
Serve over hot risotto
