Shrimp with Pasta and Spinach

INGREDIENTS: Serves Four (4)
10 oz. pkg of Frozen Spinach (chopped, thawed and drained)
1 Cup Red Bell Pepper, slivered
1 Cup Marscapone Cheese
1/4 Cup Jarlsberg Cheese
8 oz. Linguini
20 (Jumbo) Gulf Shrimp 16/20 ct, P/D, tail on   
1/2 Cup Dry White wine
1/3 Cup plus 3 Tbsp Extra Virgin Olive Oil
1/4 Cup Butter, melted
1-1/2 Cup Onion, finely chopped
Minced Garlic – ½ cup
Fennel Seed – ½ tsp.
Fresh Parsley (chopped), ½ cup
“TONY’S” seasoning, 1 tsp
Lemon Juice – ½ cup
Brown Sugar – 1 Tbsp
Lemon Zest (minced) – 1 Tbsp
L&P Worcestershire Sauce – 1Tbsp
Salt and Pepper to taste

STEPS:
In a 12" skillet, cook the onion, garlic, red pepper, Tony’s & Worcestershire Over med/low heat until tender.
Add lemon juice, brown sugar, zest, salt and pepper and leave on heat for one minute - continuously stirring.                      
In a separate pan - sauté Shrimp in olive oil and white wine over medium heat.
Bring 3 quarts of salted water to a boil and cook pasta. Turn the heat down to low and add Spinach (make sure you have squeezed it first to remove excess water)
Cook Pasta and Spinach on low heat for one minute before draining pasta.
Place the pasta spinach mix into a warm bowl, toss with 1/4 cup melted butter.
Add the onion/pepper mix & parsley & toss to coat pasta.
Add sautéed shrimp, Marscapone & Romano-Pecorino over pasta mix.
Enjoy with a Duck Pond Sauvignon Blanc or Ferrari-Carano Fume Blanc.
