Soy sauce chicken wings

INGREDIENTS:
1 c Soy sauce
2/3 c Light brown sugar
2 tbl Sesame oil, optional
2 tbl Rice vinegar
1 head of garlic, peeled and minced
1 tsp Red pepper flakes
2 to 3 tbl Fresh ginger root, a knob the size of a thumb
2 to 3 lbs of Chicken wings

STEPS:
Combine the first six ingredients on the list in a bowl.  Peel fresh ginger root and using a hand held grater, grate ginger over the bowl making sure to catch juices.

Put wings into a ziplock bag and pour marinade over the chicken.  Place bag in a bowl and let it sit in the refrigerator for at least 30 minutes.  It's best after being marinated for 2 hours or overnight, turning several times.

Preheat oven to 425°F.

Spray baking dish with nonstick cooking spray or line with aluminum foil.  Cook chicken for 25 to 40 minutes or until juices run clear when thickest part of chicken is pierced and internal temperature is 180 degree F.
