INGREDIENTS:
3 cups unbleached flour
1 tsp. soda
1 Tsp. ground cinnamon
1 tsp. salt
Dash freshly ground nutmeg (optional)
1 cup canola oil
3 eggs
2cups sugar
4 cups strawberries (chopped)
1 + cup freshly chopped pecans
Optional: Streusel Topping: 1 Cup sugar, 3/4 cup flour, ¼ cup butter
STEPS:
Preheat oven 350 F
Combine first 5 ingredients, set aside
Combine oil, eggs and sugar; mix until creamy
Add dry ingredients, mixing just until moistened
Add strawberries
Measure into greased and floured muffin tins…2/3 full
Top with desired topping or none at all
Bake until toothpick comes out clean (@ 350)

The Lighthouse Bakery was established in 1997. The building was built in 1912 and is surrounded with beautiful Live Oaks. There are three dining areas including dining on the front porch with soothing water fountains. The owners provide WiFi and electrical outlets to its customers for webuse and even allow people to use the Bakery's front porch for internet access after hours.
The Lighthouse Bakery always gets high scores from the Health Department. Their current score is a 100.
