Sweet Olive Pizza Dough

INGREDIENTS:
2 lb 4 oz flour
1 lb 0.5 oz water
14 oz starter
1.5 teaspoon yeast
1 tablespoon salt
1 tablespoon sugar

STEPS:
Place all ingredients in the bowl of an electric mixer fitted with the dough hook. Mix on first speed for 3 minutes. Mix on 2nd speed for an additional 5 - 7 mins. Immediately place in the refrigerator.

To use pizza dough, preheat oven to 500 degrees or more. Allow dough to sit at room temp for 10 minutes wrapped in plastic wrap. Remove from plastic and stretch with your hands to desired size and thickness or roll with a rolling pin. Lay crust on a cookie sheet or pizza peel dusted with cornmeal. Top crust (remember to cut toppings in small pizzas so it doesn’t weight too much for crust). Either bake pizza directly on cookie sheet or remove to preheated pizza stone in the oven dusted with plenty of cornmeal. Bake for 10 minutes or until cheese is bubbly and crust is lightly golden.
