"Thank You" Dressing

Salvation Army Coastal Alabama Area Command

INGREDIENTS:
3 lbs Cooked Cornbread
20 oz can Chicken/Turkey
2 tbl Seasoning Salt
2 tbl Black Pepper
3 stalks Celery, diced
1 medium Onion, diced (optional)
1 Bell pepper, diced
20 oz Chicken or turkey Stock
1/2 cup Sage
2 tbl Poultry Seasoning

STEPS:
Preheat oven to 350 degrees.

In a large pot, bring stock to a boil.  Add seasoning, pepper, celery and onions (optional) until cooked.  Pour mixture into dry cornbread in batches until it is to the desired consistency. Bake for 20 minutes.

SPECIAL EVENT:
The Salvation Army of Coastal Alabama serves a traditional hot turkey and ham meal to ANYONE who would otherwise go without on Thanksgiving Day. Chef Cecil Morris and his staff prepare to feed 1,000 people each year. It takes a week of preparation and nearly 100 volunteers to serve our restaurant-style meal!

The meal is served from 11am – 3pm at Area Command, 1009 Dauphin Street, Mobile, AL.

The Salvation Army relies on the generous donations from our community to make the Thanksgiving Dinner possible. Please call 251.438.1625 if you can help us provide this holiday tradition for those in need.

Items needed include turkeys, hams, green beans, yams, cornmeal, rolls, etc. Desserts are also needed like cakes, pies, candies, etc.

ABOUT THE CHEF:
Chef Cecil Morris Jr., the Culinary Arts Manager at the Salvation Army of Coastal Alabama, is one of the command’s proudest success stories.

Morris went through the Salvation Army treatment program because of a 15-year addiction that threatened to ruin his life, but he turned it around with the help of the Salvation Army. In 1993, Morris began as a transient and later progressed into a client of the Corps Salvage Rehabilitation Center (CSRC). The process, as with many beginning recovery, was not without difficulty. He was dismissed shortly after entering the program for behavioral problems. Morris attributes the problems to street living and his fear of the unfamiliar. Morris soon found out The Salvation Army is a place for second chances.

Most new clients in the CSRC program are assigned to the kitchen as a dishwasher. As Morris made his way through the recovery process, he also rose through the kitchen ranks. He was originally hired as a part-time cook, but after various positions and promotions, Morris became Culinary Arts Manager, a position he proudly holds today.

Morris has continued to stay with The Salvation Army despite other offers of employment because he wants to give back. With a new life of sobriety, he feels it is his responsibility to give the support and encouragement he received to others. Today’s clients face similar challenges to those Chef Cecil faced during his recovery. He is proof that second chances really do work, giving hope to many who face serious addiction.
