Tiramisu Parfaits

INGREDIENTS:
½ cup strong brewed coffee
1 tsp rum extract
2 tbs unsweetened cocoa powder, divided
2 cups cold milk
1 package of instant vanilla pudding
4 ounces cream cheese
1 cup Bruno’s bread pudding, cut into small cubes
2 cups whipped topping
1/3 cup white chocolate curls

STEPS:
In a large bowl whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft set. In another bowl, microwave cream cheese until soft. Gradually fold cream cheese into pudding mixture and set aside. Mix 1 tablespoon of cocoa powder and rum extract into coffee. Place cubed bread pudding in a bowl and coat with coffee mixture. Refrigerate for 5 minutes.

Divide bread pudding into 4 parfait glasses or serving dishes. Top with half of the pudding mixture, 1 cup of whipped topping and 1 tablespoon of white chocolate curls. Repeat layers. Cover and refrigerate for 2 hours. Just before serving dust with cocoa powder and white chocolate curls.

For a lighter option, use fat free cream cheese, sugar free pudding and fat free whipped topping.  Lady fingers can also be substituted for Bruno's bread pudding.

Bruno’s has partnered with Jayne Godfrey from Team Fox for Parkinson’s Research for her annual fundraiser. This year’s event will be held Thursday, September 13, at Five Rivers on the causeway. ABOUT THE GUESTS:
Angela Henderson has worked in the grocery business for over 25 years. She began her career with Delchamps and continued at Bruno’s after the buyout in 2001. Angela studied at Bishop State Community College and is currently the secretary/treasurer of the Mobile Chef Association.

Jayne Godfrey was diagnosed with Parkinson’s disease at the age of 39. In 2009, she got involved with the Michael J. Fox Foundation forming Team Fox here locally. Since then her organization has raised over $60,000 for research and development.
