INGREDIENTS: Tuna Sashimi Stack
2 oz of Fresh tuna
1/8 cup Cucumbers, diced
1 oz Asian herbs (cilantro, basil & green onions)
1 tsp Sesame Seeds
2 oz Sweet stir fry sauce
3 each Sesame Crackers
Sesame Soy Sauce
1/2 Fresh Avocado
Pinch of Fresh micro greens
2 oz Ken's Cucumber wasabi sauce
STEPS:
Dice tuna and cucumber and place in a bowl. Add seseme seeds, sesame soy sauce, and sweet stir fry sauce to the tuna and cucumber and mix. Set aside.
Using a cylinder as a mold, pack avocado to the bottom and then spoon tuna mix on top. Garnish with micro greens and cucumber wasabi sauce. Serve with sesame crackers.
INGREDIENTS: Mediterranean Lettuce Wrap
4 oz Shrimp, boiled and cooled
4 Romaine heart leafs
Onions
Tomatoes
Olives
Feta cheese
Olive oil
1/4 cup Mediterranean Spread (hummus & pesto sauce)
STEPS:
In a small bowl, combine onions, tomatoes and olives. Set aside.
Cut romaine to make wrap, about 6inches by 4 inches. Spoon shrimp and olive mix into the cup. Top with feta and a drizzle with olive oil.
Plate the lettuce cups & add Mediterranean spread.
