Venison Sausage Quesadillas

INGREDIENTS:      
1 lb venison sausage
10 flour tortilla pads
1 lb shredded cheese
½ lb spreadable butter

STEPS:
In a large skillet over med high heat brown the sausage, when done remove from skillet and set aside. Wipe the skillet with a clean cloth and heat to med high. Spread a thin layer of butter on one side of a flour tortillia and place butter side down in the skillet, sprinkle about ½ cup of cheese on the pad and the add about ½ cup sausage, fold tortilla in half and cook till light brown on both sides, repeat process with remaining ingredients.

One Meal feeds the homeless and hungry every Sunday afternoon at 4 pm at the church on the corner of N. Dearborn and St. Louis streets.  Donations of all kinds are always needed. You can donate by check or money order payable to One Meal.  In addition to monetary donations, One Meal is also in need of other donations like water, food and supplies.

Members of Friends for Satsuma Schools have scheduled their first big fundraiser to benefit the new school system, and the event promises to have something for everyone.

The Satsuma Swamp Fest Cook Off and Gator Hustle 5K Run and 1-Mile Fun Run is Saturday, March 9, from 10 a.m.-3 p.m. at the Satsuma High School Track. Proceeds from Swamp Fest will help fund renovations at the schools in the Satsuma City School System.

The Cook Off should tempt any number of amateur cooks who’ll try their best to take home a blue ribbon. A panel of judges, including Chefs Allie Sansom from the Battle House and Tommy Robear from the Louisiana Cajun Market, will make that selection from among the entries of ribs, chicken, jambalaya, sausage/chicken gumbo and chili. Though visitors do not get to vote, they can buy tickets to taste all the entrees, then finish off their meal by purchasing a slice of cake or pie. here will be other lunch offerings for those whose taste doesn't run to chili and gumbo, and for the little ones, there’ll be the ever popular hot dogs (prepared by the Satsuma Fire Department), popcorn and snow cones.

Children can also enjoy various games, inflatables and face painting, sponsored by the Robert E. Lee Elementary School PTO. The Satsuma Fire Department will have the smoke trailer on the grounds and the Mobile Sheriff’s Flotilla will be there with their search and rescue airboat.

The Gator Hustle 5K Run starts at 10 a.m. with runners hustling around Gunnison Creek swamp before returning to the school; when those racers cross the finish line, the 1-Mile Fun Run will begin. Entry fee is $20 for adults and $15 for youngsters, and, said Keeney, participants can still apply by 9:30 the morning of the event.

There will be live music all day, including Al Griffin and the Outlaw Country Band, Aaron Moss, Jessica Strenth and various other singers and musicians.

Arts and crafts vendors will sell Easter baskets, tee shirts, jewelry, picture frames, stuffed dolls, various wood crafts, wind chimes, yard art, Alabama Football items, hair bows, doll clothes and monogrammed items. Spaces rent for $25 each, and contact person is Mary Pierce, 251-675-2465.

A few of the extras at Swamp Fest include an opportunity to purchase a ticket for a chance to win a Bama quilt made by Myra Thomas and a police department “lock-up” with the audience paying bail to Police Chief Chris McLean to spring the “criminals.” Proceeds willl go to FFSS.

In addition, a barrel will be set up to collect canned goods and donations for One Meal, a ministry led by Satsuma resident Mike McKinley to feed the homeless downtown a meal every Sunday afternoon — so visitors are asked to reach into the pantry and load a grocery bag with a dozen cans of corn or tomatoes for a good cause.
