Miso Honey Glazed Oysters

INGREDIENTS:
12 each Eastern Oyster
½ cup White Miso
½ Cup Honey
1 each small sized Daikon Radish
1 each medium sized Carrot
1 small bunch of Mint rough chop
1 small bunch of Cilantro rough chop
¾ cup simple syrup
1 TBL spoon of fish sauce
Juice of two limes

STEPS:
In a bowl, mix simple syrup, fish sauce and lime juice thoroughly.  Set aside.

Using a mandolin with the finest set of "teeth", slice daikon and carrot on its thinnest setting.  Rinse the strings of daikon and carrot in cold water.  Combine with mint and cilantro and toss in the dressing.  Let vegetables marinade for at least 30 minutes.  Strain and squeeze very tightly to wring out any excess liquid.

In a saute pan over law heat, warm honey and then add miso to dissolve.  Stir continuously until the mixtue is dissolved and slightly reduce.  Set aside to completely cook.

Top shucked oyster with a teaspoon of miso honey glaze and some daikon & carrot salad and serve.

SPECIAL EVENT:
Alabama Gulf Seafood presents the 5th Annual Oyster Cook-off at the Hangout in Gulf Shores.  Over 40 teams including celebrity and local chefs will compete to see who can serve up the best oyster dish. Champagne, wine, beer and oyster shooters are available for sampling as well.  There will also be a shucking competition and live music.

The cook-off gets underway at 11:00 a.m. Saturday, November 3 at the Hangout.  Admission is free but tasting tickets will be sold at the event if you want to try out the food.  The tasting tickets cost $2 a piece or a book of 20 for $30.
