INGREDIENTS: Blackened Fish Tacos
6oz of Fish pieces
2 7" Flour Tortillas
2oz Cole Slaw each (Brown Mustard & Apple cider vinegar Base)
Season fish with blackened seasoning.
Heat skillet or griddle on medium high heat and cook fish.
While fish is cooking, heat two flour tortillas.
To serve, place fish in tortillas and top with cole slaw.
INGREDIENTS: Cabo Shrimp Tacos
6 Jumbo Shrimp, peeled & devein
2 oz Mango salsa (Mangoes, Red Bell Pepper, Cilantro, Jalapeno, Fresh Lime Juice)
2 7" Flour tortillas
1oz Shredded mozzarella
Grill shrimp or cook in skillet over medium high.
While shrimp is cooking, heat two flour tortillas.
To serve, put shrimp into tortillas and top with mango salsa, shredded mozzarella and crema
INGREDIENTS: Chili en Nogada
2 Chili Poblano
5oz cooked Ground Beef
5oz Dried Fruit & Almond mix
4oz Nogada Sauce (Heavy cream, cinnamon, cognac and Walnut)
Preheat oven to 350 degree.
Fry chili pablano in hot oil. Peel the skin off the chili, clean out the seed and devien. Set aside.
In a pan over medium heat, cook ground beef and then mix with crushed almond and dried fruit.
Stuff the ground beef mix into the pablano pepper. Place in preheated oven for about 5 minutes.
Pour Nogada sauce over poblano pepper and garnish with sun dried tomato if desired.
