INGREDIENTS: Crawfish cakes
¼ cup Mayonnaise
1 large Egg
6 tbl Fresh bread crumbs
1 tbl Worcestershire sauce
1 tbl Fresh lemon juice
1 tbl Minced green onion
1 tbl Red bell pepper, diced 1/4 inch
1 tbl Old Bay seasoning
1 lb cooked crawfish tails, moisture drained
Combine all ingredients except crawfish
When mixed add crawfish, cover and refrigerate for 20 minutes
Form in to 3 or 4 ounce cakes
Dust with all purpose flour and pan saute with canola oil, medium heat, 2 to 3 minutes per side or bake in 400 degree oven on greased baking sheet 6 to 8 minutes.
Squeeze fresh lemon juice on top just before serving with a side of creole remoulade sauce.
INGREDIENTS: Creole remoulade sauce
1 cup mayonnaise
4 tbl Zatarains creole style mustard
1 tsp Fresh lemon juice
1 tsp Worcestershire sauce
1 dash Hot pepper sauce
2 tbl Minced green onion (white and green parts)
2 tbl Capers, drained and mashed
Mix ingredients well, cover and refrigerate until ready to serve.
Servings: 4 to 6

The Junior Leadership Council of the American Cancer Society presents their 9th Annual Mudbugs in the Swamp!! A crawfish, live entertainment, and silent auction fundraiser to benefit Mobile & Baldwin County American Cancer Society.
"Mudbugs in the Swamp" will be Thursday, May 16th from 6:30 p.m. to 9:30 p.m. at Felix's Fish Camp on the Causeway. There will be an abundance of crawfish, your favorite cold refreshments donated by Budweiser and drink specials, a silent auction and games. Live entertainment will be provided by Wes Bayless & Ricochet Creek and The Mulligan Brothers. Tickets are $20 in advance and $25 at the door and can be purchased from any JLC member, Felix's Fish Camp, O'Daly's Irish Pub, Pita Pit, Elizabeth's Garden, Zimlich's Patio & Garden Center or the ACS Office.
Since its establishment, "Mudbugs in the Swamp" has raised over $100,000 for the fight against cancer. Because of this, we would like to thank the community and their continued support of this amazing fundraiser. Director of Culinary Operations, George Panayioutou, has been in the restaurant business all his life. His father, Gus Constantine Panayioutou, was Mobile's premier restaurateur for many years. George followed in his footsteps owning and managing various restaurant operations in Mobile, including the Country Club of Mobile. When the Cooper brothers bought Ruth's Chris in Mobile, they immediately contacted George to help them assure the quality of food, preparation, and presentation that Mobilians demand.
