INGREDIENTS: Cucumber Salmon Sandwiches
1cucumber, peeled & sliced crosswise
Blood orange olive oil
Slice cucumbers and place on plate
Cover each cucumber with cream cheese
Add a slice of smoked salmon
Add a caper or two to the top
finish off by drizzling blood orange olive oil on top

Green onion for color
slice cucumbers and place in bowl
Add 1 tablespoon Sicilian Cerasuola olive oil
Add ½ tablespoon Casa Perdido Red Muscadine Wine Vinegar
Sprinkle your chopped onions over for color

About the Guests:
Owners Vickie and Richard Bailey became interested in this concept while traveling to visit their daughter in Italy who married an Italian man with a family olive orchard. Vickie and Richard have made numerous trips to this orchard, where they have participated in many harvests bringing family and friends. They have grown passionate about the many health benefits of extra virgin olive oil & balsamic vinegars and are eager to share this concept with the community, thus the creation of the store-The Happy Olive.
