2 (6-8oz) Boneless chicken breast
¼ cup Diced roasted red peppers
¼ cup Crumbled feta cheese
1 tbl Basil chiffonade
1 tbl Chopped pitted kalamata olives
2 tbl Chopped bacon
1 Small onion - diced
2 Garlic cloves crushed
1 tbl Sundried tomatoes
½ tsp Oregano
Fresh ground pepper
Preheat oven to 425 degrees.
Cut a horizontal slit through thickest portion of each chicken breast to form a pocket. Sprinkle with salt & pepper to taste using kosher salt and freshly ground pepper. Set aside.
Sautee bacon over medium heat till rendered. Add onion and oregano after one minute add garlic. Cook another 2 minutes or until onions are translucent. Pour into mixing bowl stir in all other ingredients.
Stuff two tablespoons stuffing mixture into each pocket. Close opening with a wooden pick. Place chicken on an oiled baking pan. Drizzle each breast with olive oil and bake at 425 degrees for five to seven minutes until brown and chicken is done. Serve with your favorite sides.

Family Promise of Coastal Alabama will be celebrating their 10th Anniversary on May 15, 2013 with a celebratory, benefit luncheon at the Bragg-Mitchell Mansion.
For 10 years Family Promise has been the ONLY homeless shelter in Mobile County to accept families with children. Families with children comprise the fastest growing segment of the homeless population today, with the average age of a homeless person being 6 years old.
Since opening in 2003, Family Promise has served over 87,000 meals, provided over 26,280 beds, given over 39,200 van rides and served over 1,100 homeless families.
On May 15, 2013 a celebratory, benefit luncheon will be held on the grounds of the Bragg-Mitchell Mansion, located at 1906 Springhill Ave.from 11:00 a.m. to 1:00 p.m. National Family Promise Found, Karan Olson, will be the keynote speaker at the luncheon. Ms. Olson will be speaking on how one person can truly make a difference in today's society. Georgia Rousso's Catering, Spot of Tea, and Starbucks will be providing the luncheon spread on the main dining room table at the Bragg-Mitchell Mansion. The Azalea Trail Maids will be on hand to welcome all guests upon their arrival.
All proceeds directly benefit Family Promise of Coastal Alabama and their mission the end homelessness, one family at a time.
