2 sticks butter
1/2 small onion, chopped or thinly sliced
1 ½ tsp. ground Sage
3 large cloves minced garlic
¼ c fresh Parsley (or 1 tbsp dried)
3 tbsp Olive Oil
1 family package of thick pork loin chops (at least 4 pieces)
1 box of wheat spaghetti pasta
1 cup dry spinach
½ cup Cherry tomatoes (cut in half)
Sharp white cheddar cheese
Pasta - Add pasta to boiling water. Boil for 8 minutes. Drain and set aside.
Pork & butter sauce - In large, heavy skillet, heat olive oil & 1 stick butter over medium heat.
Season pork chops with salt & pepper & cook till browned. Set aside.
In the same pan, cook onion & garlic until onions are translucent (4-5 minutes). Add the sage & parsley. Stir often to prevent burning. Add pork chops & cover with lid. Lower heat to simmer. Cook for 10-15 minutes.
Remove pork chops & cut into slices. Add spinach and cherry tomatoes and the other stick of butter to butter sauce. Warm until stick of butter melts and spinach wilts
In large wok, or bowl, pour sauce over the pasta and mix. Lightly season pasta with salt & pepper.
Put pork chop strips on top. Shred white cheddar cheese on top.
