1 oz Olive oil
2 tbl Garlic, minced
1 cup Arborio rice
4 oz White wine
4 cups Chicken stock
1 cup Parmesan cheese
6 oz Smoked salmon
1 tbl Basil
Salt and pepper to taste
In a large pan, sauté garlic in oil add rice. Incorporate 2oz of stock and 2 oz of white wine every few minutes mixing constantly until rice is cooked.
Fold in parmesan cheese, salmon and basil. Serve immediately.
Note: If you would like to add any other vegetables to the risotto, you can also fold it in at the end. Make sure it's heated through before serving.
