2 - 16 oz cans black beans
1 - 11 oz can niblet corn
1 - 28 oz can diced tomatoes
1 - 1 1/4 oz envelope taco seasoning mix
1 - 1 oz envelope hidden valley ranch dressing mix
1 lb ground beef
1 cup of water
First, line your slow cooker with Reynolds Slow Cooker Liner for easy clean up
In a skillet over medium heat, cook ground beef and drain.
Transfer to crock pot and add black beans, corn, tomatoes and seasoning. Gently stir ingredients together.
Add 1 cup of water and cook on high for two hours or low for 4 hours.
Serve with sour cream, tomatoes and/or avocados if desired. Soup can also be served in a bread bowl.
- If you cook too long the water will start to evaporate. Make sure you turn your slow cooker to "warm" after the times noted above. You can always add additional water or even a can of tomato soup if you want more of a soup consistency…or you can let evaporate out and have more of a chunky chili feel.
- Recipe can be made on the stove top as well. Turn heat into medium and stir occasionally.
- Use tortilla chips to dip!
- Works as appetizer, dip (with less water), or full fledged dinner
