Charred Watermelon Salad

Charred Watermelon Salad Charred Watermelon Salad

INGREDIENTS:
1 seedless Watermelon (5-7lb) - rind removed and cut into 1/2"-1" cubes
4 Tablespoons Extra Virgin Olive Oil
1 Tablespoon Fresh Ground Black Pepper
1 Tablespoon Kosher Salt or Sea Salt
1 cup Blue Cheese Crumbles
8oz Watercress or Arugula 
1/2 Cup Balsamic Vinegar

STEPS:
In a small sauce pan over medium heat pour in balsamic vinegar and cook for approximately 15-20 minutes until vinegar becomes thick like syrup.
Remove from heat and let cool to room temp.
Cut watermelon in half and cut away the rind.
Block off watermelon and cut into 1/2"-1" cubes.
Heat grill or nonstick grill pan over medium-high heat. 
Coat watermelon cubes lightly with Olive oil and season with salt and pepper.
Place cubes grill or pan and grill each side about 1-2 minutes until grill marked on all sides.
Remove from grill to a plate to let cool.

To Plate:
On a plate, place 2oz of watercress or arugula in center of plate.
Stack cubes on top of watercress.
Using a tablespoon lightly drizzle balsamic reduction over watermelon.
Then sprinkle blue cheese crumbles over top of watermelon.
Garnish with more watercress or arugula if desired.
Serve immediately.

His "cutting edge" yet "comfort" style cuisine and his tenacity in the use of local produce, shrimp, and fish, has earned him the nicknames of "Guerrilla Chef".
