Chipotle Lime Patron Lobster Roll

INGREDIENTS:
2 Lobster Tails (3-4 OZ Each) 
1 BL Olive Oil 
1 /2 Butter Softened 
1/2 Cup Finely Diced Red Onion 
3 TBL Finely Chopped Chipotle Peppers In Adobo Sauce 
1 SP Kosher Salt 
1/2 TSP Cracked Black Pepper 
1 Lime Quartered
2 OZ Patron Tequila 
2 Split Top Bun (Potato or Hawaiian Bread Tastes Best )
2 Leafs Lettuce (Boston or Butter Tastes Best)

STEPS:
Begin to heat a large sauce pan over medium-high heat.
Add oil and diced red onion and limes and stir.
Add salt and pepper and stir to combine.
Add the chipotles and continue to stir.
Cool for 2 minutes.
Add the tequila carefully (if cooking over open flames remove from the burner while adding alcohol).
Continue to stir and scrape the pan to remove the small bits stuck to the bottom of the pan.
Reduce heat to medium.
Begin to add the butter over three increments (Fully incorporating each increment before adding more).
Add the lobster tails and continually baste the lobster in the butter mixture for 5 minutes.
While lobster cooking... toast the buns (if desired).
Place a lettuce leaf in each bun.
Place a lobster tail in each bun and spoon butter mixture over the lobster.
Garnish with lime zest.
