Bacon Wrapped Pork Tenderloin

INGREDIENTS:

1pkg (2pc) Pork Tenderloin

1 lb Layout Bacon (Thin)

8oz Baby Potatoes

1oz Rosemary

1oz Thyme

3 cloves Garlic

Salt and Pepper to Taste

1bu Green Asparagus

1pt. Cherry or Grape Tomato

1oz Basil

½ oz Olive Oil

To Taste Flake Sea Salt

1ea Sweet Onion

8oz Thick Cut Smoked Bacon (Bill E's)

1qt. Beef Stock

1 cup Red wine

1tsp Whole butter

1tsp AP Flour

STEPS:

1. Lay bacon side by side overlapping on cling film the width of the tenderloin

Wrap the pork overlapping 1" at the seam.

2. Prep the potatoes by coating lightly with olive oil. Lay herbs on the bottom of the baking sheet. Lay the potatoes on top of the herbs and bake at 325 degrees until tender. Approximately 25 minutes. Reserve for service.

3. To prepare the tomatoes coat in olive oil as well, lay over basil and sliced garlic cloves. Broil tomatoes just until warmed all the way through and the basil and garlic flavors permeate. Reserve for service.

4. To prep the asparagus peel if the stems are large. Blanch in boiling salted water until tender. Shock in an ice bath and reserve for service.

5. To prepare the pork sear on the seam side until fully rendered and sealed. Roll the pork to render the bacon on all sides. Place in a 325 degree oven and cook until the loin reaches an internal temperature of 145 degrees. If a well done temperature is desired continue cooking to an internal temperature of 160 degrees and let the loin carry over before cutting.

6. To finish the sauce render the thick cut smoked bacon, julienne and caramelize the sweet onion in the renderings. Deglaze the pan with red wine and add the beef stock. Reduce the stock until flavorful and thicken with flour and butter kneaded together to form a beurre manie'
