Lucy's Mexican Tortilla Casserole

INGREDIENTS:

·  8 whole flour tortillas
·  1 lb lean ground chuck
·  16 oz salsa, divided
·  1 whole red onion, chopped small
·  1 whole green bell pepper, chopped small
·  1 whole yellow bell pepper, chopped small
·  1 whole red bell pepper, chopped small
·  1 whole jalapeno, seeded and chopped small
·  4 whole garlic clove, finely chopped
·  8 oz fresh spinach, chopped
·  11 oz can black beans, drained and rinsed
·  1 cup frozen corn, thawed
·  2 cups shredded cheddar cheese
·  1 cup shredded pepper jack cheese
·  8 oz sour cream
·  Zest and juice of 1 whole lime
·  1 ½ teaspoon kosher salt
·  3 teaspoon chile powder
·  2 teaspoon paprika
·  2 teaspoon ground cumin
·  2 teaspoon dried oregano
·  1 tablespoon Olive oil
·  ½ teaspoon black pepper

STEPS:
·    In a large skillet brown ground meat and then drain. Transfer drained meat to a bowl, add 1 cup salsa, stir to combine, and set aside.
·    Heat 1 tbsp. olive oil in the same skillet over medium high heat. Add peppers, onions, jalapeño, and garlic. Cook for 5 minutes and then add spinach. When spinach wilts, add corn, beans, salt, black pepper, chili powder, paprika, cumin, and oregano. Remove from heat.
·    In a small bowl mix sour cream, lime zest, and lime juice together. Set aside.
·    Spray a 9x13 baking dish with non-stick cooking spray. Spread 1/2 cup salsa in the dish. Place 3 tortillas down, cutting to make them fit if needed. Layer half the vegetable mixture over tortillas. Top with half the ground beef. Dot half the sour cream mixture over vegetables and beef. Sprinkle with 1/3 of the cheese.
·    Repeat another layer with 3 more tortillas, remaining vegetable mixture, ground beef, sour cream, and cheese, reserving 1/3 of the cheese. Top this second layer with another layer of tortillas. Spread the remaining 1/2 cup of salsa over the top of the tortillas.
·    Bake at 350 degrees for 15 minutes then sprinkle reserved 1/3 cup of cheese on top. Continue to bake for another 30 minutes. Allow to rest for 5 minutes before cutting.
